Starborough Sauvignon Blanc 2009

This Sauvignon Blanc was produced from two individual Starborough vineyards. Starborough Terrace located on the southern side of the Awatere River and O’Dwyers Farm in the Wairau Valley. Both these sites have complemented each other to produce an elegantly balanced and complex wine.

The fruit was picked once flavours had reached their peak in cold morning conditions to retain freshness and fruit characters. The fruit was pressed off as quickly as possible to minimise skin contact and juice deterioration following harvesting. After settling, the juice was fermented using selected yeast in stainless steel at cool temperatures, retaining fruit flavour and freshness. A small portion was fermented in seasoned French barrels adding weight and texture to the palate.

This Pinot Gris originates from two individual Starborough vineyards. Starborough Terrace located on the southern side of the Awatere River and O’Dwyers Farm located in the heart of Marlborough’s Wairau Valley. The fruit was carefully monitored during ripening and hand harvested in cool early morning conditions at peak maturity and flavour development.

The fruit was crushed and pressed quickly at cool temperatures to retain fruit flavour and freshness. Following the settling period the clear juice was racked to stainless steel and then fermented using selected yeast at cool temperatures. A portion was fermented in seasoned French barrels adding weight, texture and complexity to the finished wine.
